Recipe: Poké Bowl
I hope you’re having a wonderful day and staying healthy! Today’s recipe is… kind of a recipe? More of a guideline really, I’ll give you some ingredients to include but I really encourage you to take advantage of your one grocery trip for the week to get the freshest ingredients possible. This recipe can be adapted to what’s in season very easily. I’ll give you the building blocks and you can add to it what you want. For example – my version contained starfruit which I don’t always get at the store, so explore what you like and play around – note because it’s a Poke Bowl you’ll want to stick to fresh raw ingredients you can store in the fridge. Have fun experimenting!
Perfect Poké Bowl
The Sauce
- 2 Tbsp Rice Wine Vinegar
- 1/4 Cup Soy Sauce
- 2 Tsp Sesame Oil
- 1 Tsp Sesame Seeds
- 2 Sheets Nori (Seaweed Sheets)
The Bowl
- 2 Cup Cooked White Rice
- 2 Yellow Mangoes
- 2 Cucumbers
- 1 Bunch Enoki Mushrooms
- 400 Grams Salmon
Cut the salmon into cubes of whatever size you desire (I like bite sized)
Mix the salmon with the soy sauce, rice wine vinegar, and sesame oil and set aside to marinate
Slice the Cucumbers, cube the mangoes and separate the mushrooms
Build your bowl! Start with rice on the bottom, followed by cucmber, mango, mushrooms and salmon adding any additional fruit, vegetables or fish you've cut up for your bowl.
Top with sliced Nori and Sesame seeds
